We’re vacationing on the cheap this summer. Yes, that means we’re camping. Tent camping, no less. Camping can get expensive really fast if you don’t prepare your own food. And, it can get exhausting really fast if most of the prep work hasn’t been done before the trip.
Which means, for the last week I’ve been making breakfasts and dinners galore that can be easily cooked or reheated on a camping stove (or in the fire) so we can enjoy yummy food in minutes with minimal mess. I started with French toast sticks.
Since then I’ve made chicken foil dinners, sausage/egg/cheese biscuits, muffins, hash browns, bacon, ham and Swiss sliders, pancake mix, breakfast burritos, and grilled cheese sandwiches. It’s all in the freezer until we pack for our trip.
It’s pretty satisfying to know that I don’t have to get up at the crack of dawn (even though I probably will anyway…darn birds) to cook my family a hot and hearty breakfast. Or to be able to come home after a long day of outdoor play to a meal that needs only 15-20 minutes of reheating and voila! Served.
Can’t wait to eat like a queen.
